Pairing a Quinoa Pork Bowl in Quarantine

El Maridaje de un Bowl de Quinoa y Cerdo en Cuarentena

The term pairing” we use in the world of wine also applies in the kitchen. Pairing is like a marriage. When we say, they’re made for each other,” the same happens with the ingredients we combine in the kitchen. It means two “parts” create a whole when united. If you mix the right ones, both complement each other, and it becomes a memorable experience in your mouth.

We are what we eat. But in these times we are living in, we want to feel healthy but also happy and alive. Flavor has the power to reach our souls and leave us in good spirits. Fresh ingredients and the act of cooking not only have energy, they have the power to bring back great memories. We want to add love and good vibes to the time we spend in the kitchen, and thus, food becomes our best therapy and medicine. This has been my mission since I started my campaign with “The Kitchen Doesn’t Bite.”

When I thought of all of these things, I ended up making a Quinoa Pork Bowl with Mango and Cilantro. I did this for several reasons:

¤ The acidity of the dressing and the sweetness of the mango pairs with the fat in the pork, despite the fact that the loin is the leanest” cut of all (similar to the chicken breast).

¤ Quinoa is a super food” and if it’s heirloom, even better. White (pearl) quinoa cooks in about 14 minutes and heirloom quinoa in 17. You can make a large amount at the beginning of the week, and then re-invent new recipes with it.

¤ Pork loin is affordable, it cooks easily, quickly and if you don’t overcook it, it will be extremely flavorful.

¤ Avocado and cilantro are two of my favorite ingredients and the mango brings me a lot of childhood memories, so I couldn’t leave them out of quarantine!

QUINOA PORK BOWL WITH MANGO & CILANTRO

2 portions, 15 min.

For the pork:

¤ 1 pound of pork loin chops, (1-2)

¤ 2 tbsp. of extra virgin olive oil

¤ Salt and pepper to taste

¤ Garlic and/or chili powder (optional)

 

What you need for the salad:

¤ 1/2 cup of quinoa, cooked al dente

¤ 10 cherry tomatoes, cut in half

¤ 1/2 fresh mango, ripe and cut into cubes

¤ 1/2 Hass avocado

¤ 1/2 cup of lettuce, arugula, alfalfa and/or watercress

¤ 1/4 cup of radishes, carrots and/or hearts of palm

¤ 4 tbsp. of extra virgin olive oil

¤ Juice of 1 lemon (1 orange or 1 tbsp. Sherry vinegar)

¤ Pinch of fresh cilantro

 

What to do:

1. In a pan at medium high temperature, add the oil and loin. Cook for 3-4 minutes each side. You want it very juicy and not overcooked.

2. Meanwhile, prepare the bowl. You can use the ingredients above or use whatever you like or have available. Just make sure you always add different textures to a salad. You want something sweet, creamy, refreshing and crispy in every single bite.

3. Remove the loin, let it rest for 3 minutes, cut it into cubes, and then add it to the salad bowl.

4. Add olive oil, lemon juice, salt, pepper, toss it all and serve.

El término maridaje que usamos en el mundo del vino aplica también en la cocina. El maridaje es como un matrimonio. Cuando decimos, “son tal para cual”, asimismo pasa con los ingredientes que combinamos en la cocina. Es la reacción que dos “partes” crean al ser unidas. Si unes los correctos, ambos se complementan y se convierte en una experiencia memorable en boca.

Somos lo que comemos. Pero en estos momentos que vivimos, buscamos no solamente comer saludable, sino que los sabores nos lleguen al alma y nos dejen con un buen ánimo. Los ingredientes frescos y la cocina también tienen energía, y la comida nos trae memorias. Vamos a ponerle amor y buena vibra al momento que pasamos en la cocina y que así se convierta en nuestra mejor terapia y medicinaEsa ha sido mi misión desde que empecé mi campaña con “The Kitchen Doesn’t Bite”.

Al aplicar todo eso a una receta, terminé con antojos de este Bowl de Quinoa, Lomo de Cerdo, Mango y Cilantro. Por varias razones:

¤ La acidez del aderezo y el dulce del mango se complementan con la grasa del cerdo, a pesar de que el lomo es el corte más “lean” de todos (similar a la pechuga de pollo).

¤ La quinoa (quinua) es un super food y si es “heirloom”, todavía mejor. La blanca (perlada) se cocina en 14 minutos y la heirloom en 17-18 minutos. Puedes hacer una buena cantidad a principio de semana y luego agregarla a diferentes recetas.

¤ El lomo es económico, se cocina fácil, rápido y, si no lo sobre cocinas, disfrutarás de mucho, mucho sabor. ¡Por algo nos gusta tanto!

¤ El aguacate y el cilantro son de mis ingredientes favoritos, y el mango, la fruta que más recuerdos me trae de mi niñez. No podía dejarlos fuera de la cuarentena.

 

BOWL DE QUINOA, CERDO, MANGO Y CILANTRO

2 porciones, 10 minutos

Lo que necesitas para el cerdo:

¤ 1 libra de chuletas de lomo deshuesadas

¤ 2 cdas. de aceite de oliva extra virgen

¤ Sal y pimienta al gusto

¤ Ajo en polvo y/o chile en polvo

 

Lo que necesitas para el bowl:

¤ 1/2 taza de quinoa, cocida al dente

¤ 8-10 tomates cherry, cortados a la mitad

¤ 1/2 mango fresco, maduro y cortado en cubos pequeños

¤ 1/2 aguacate Hass

¤ Lechuga, arúgula, alfalfa o berro

¤ 1/4 taza de rábanos, zanahoria y/o palmitos

¤ 4 cdas. de aceite de olive extra virgen

¤ Jugo de 1 limón (de 1 naranja o 1 cda. de Vinagre de Jerez)

¤ Cilantro fresco al gusto

 

Lo que tienes que hacer:

1. En una sartén a temperatura media alta, agrega el aceite, el lomo y cocina por 3-4 minutos por cada lado. Lo quieres muy jugoso y no sobre cocido.

2. Mientras se dora bien, prepara el bowl. Puedes usar los ingredientes que te recomiendo o los que tengas disponible. Pero recuerda agregar ingredientes con diferentes texturas. Algo dulce, cremoso, refrescante y crujiente hará la diferencia.

3. Retira el lomo, déjalo reposar por 3 minutos, córtalo en cubos y añádelo por arriba a la ensalada.

4. Agrega aceite de oliva, jugo de limón (naranja o vinagre), sal, pimienta, mezcla todo y a disfrutar.
