Pineapple and Kiwi Popsicles

¡Este verano ha sido bastante fuerte, con unas temperaturas que cada vez son más altas! En esta época del año, las temperaturas comúnmente se elevan a más de 80 °F antes de que llegue la hora más calurosa del día. Instrucciones:

Summer is ramping up and so is the heat! This time of year, temperatures commonly soar to above 80°F before the hottest part of the day arrives. Longer days means finding creative ways to combat scorching temperatures and stifling humidity. What better way than with a treat that’s both cool and sweet?

Summer fruits are a fantastic way to stay cool. They are low in sugar and calories, filling and naturally hydrating. Fruits also have the benefit of providing fiber, antioxidants and vitamins that other sweet treats cannot. Many varieties of melons, berries and stone fruits (i.e. cherries, peaches, and plums) are in season this month and can be enjoyed raw, grilled, in salads or smoothies, or by themselves. Check out a farmer’s market near you for fresh seasonal produce often priced lower than grocery stores.

Then, kick things up a notch by using fresh fruit to make homemade treats like popsicles, flavored ice, or a vegan friendly “nice” cream. Often cold summer desserts require few ingredients and are easy to make. Indulging in the DIY versions of summer staples also allows more control over ingredients and the ability to sneak in goodies like fruits and vegetables while providing an opportunity to create memories with family and friends.

Ingredients:

  • 1 ½ cups blueberries
  • 1 cup raspberries
  • 2 cups limeade

 

Directions:

  1. Divide blueberries and raspberries among popsicle molds or Dixie cups.
  2. Pour limeade over the berries and insert sticks. Wooden popsicle sticks can be used with Dixie cups.
  3. Freeze mixture until completely firm (~6 hours).
  4. Dip the molds briefly in hot water before unmolding.
